When you live alone it can be quite a challenge to cook a fresh, healthy meal each evening. Whenever I buy fresh foods, I either have to plan a plethora of versatile dishes with the same ingredients, or just let them rot in the fridge. Sometimes I just feel like one salad… But after you’ve bought a cucumber, tomatoes, quinoa, beetroot, meats etc, you feel like you have to use them all up and end up having the *same* thing for days on end until you eventually get sick of it.
Not to mention the fact that when you cook for yourself it’s just not as good, is it?
After years of living alone and experimenting with quick, easy and delicious dishes; I think I’ve finally cracked it.
Sweet Potato and Chorizo Hash
It’s the one, I tell you.
And here’s how to make it (don’t worry, you won’t even need a note pad for this)….
Chop a sweet potato in to cube and microwave for 5 minutes.
Whilst it’s in the microwave, fry off your chorizo and red onion in chili infused oil.
Sling the sweet potato in to the pan to crisp them up (as the inside is already cooked now, yaaasss).
Crack an egg in to the mix and scramble all the ingredients together.
Pop it in a dish, crumble on Feta Cheese and drizzle with Balsamic vinegar.
It’s as simple as that.
I’ve eaten this 3/5 nights for the last 3 months. If variety is the spice of life, then I’m certainly not living life to the fullest. But this shit is delicious, I tell you.
